瓦そば

Kawara Soba is a dish of cha-soba (buckwheat noodles that contain green tea, making the noodles green and giving them a flavor different from usual soba noodles) cooked on a piping hot kawara roof tile and severed with various toppings.
The noodles on top are soft and chewy while those on the bottom get nice and crispy, baked by the hot title. This allows you to enjoy the deeply flavorful cha-soba with two kinds of textures.
